The business sources Wagyu from Japan, Australia, and the United States, and holds certification from the Kobe Beef Marketing & Distribution Promotion Association, a distinction few American butchers carry. Executive Chef BJ Wright leads the kitchen, translating that same Wagyu focus into a fast-casual restaurant menu alongside the retail cases. The restaurant has earned a Michelin Bib Gourmand distinction in recognition of its approachable, high-quality cooking.
